BBQ Shredded Chicken

Ingredients:

5-6 chicken breasts, boneless/skinless
1/4 cup spice rub
3 tbsp high-heat oil
1 cup water

Spice Rub:
1/3 cup packed brown sugar
2 tsp cumin
2 tsp chili powder
2 tsp onion powder
2 tsp garlic powder
2 tsp paprika
2 tsp salt
2 tsp ground black pepper
1 tsp ground mustard
1 tsp cayenne powder

Directions:

Rub the chicken with the spice mix, coating completely.
Place in an airtight container and refrigerate overnight.
Set a heavy bottom skillet over high heat and add oil.
When oil is hot, lay the chicken in a single layer and let cook for 2-3 minutes each side.
Add in the water and turn the heat to medium-low.
Cook for 20-25 minutes.
Shred the chicken in the pan using 2 forks or remove them to shred in a stand mixer then return the chicken to it's juices in the pan.
Enjoy immediately or refrigerate for 5-7 days.
