Berry Baked Oatmeal

Ingredients:

3 cups old fashioned oats
1 tsp cinnamon
1 tsp baking powder
1/2 tsp salt
1 ripe banana
2 eggs, at room temperature
1/2 cup maple syrup
1/2 cup melted butter or coconut oil
1 1/4 cup milk, any kind
1 cup any berries (frozen or fresh)
1/4 cup chopped nuts
1/4 cup coconut flakes

Directions:

Preheat oven to 350 and spray a 9x9 in baking pan (or equivalent).
In a medium bowl, whisk together the oats, cinnamon, baking powder and salt then set aside.
In a small bowl mix together the banana, eggs, maple syrup, melted butter and milk the pour the wet ingredients over the dry and mix to combine.
Pour half of the blueberries on the bottom of the pan then pour the oatmeal mixture over the top.
Top with remaining blueberries, pecans and coconut flakes.
Bake for 30-40 minutes or until just set. Overcooking will result in a rubbery dish.
Enjoy immediately or keep in the fridge for up to 5 days. Reheating individual servings as needed.
