Vegan Coffee Cake

Ingredients:

For the cake:
2 cups flour
2 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
1/2 tsp nutmeg
1 personal container of vanilla yogurt
3/4 cup milk
1/4 neutral oil 1/2 cup sugar
1 tsp vinegar
1 tsp almond extract

For the topping:
1/3 cup almond flour
1/3 cup packed brown sugar
3 tbsp neutral oil
1 tbsp cinnamon
pinch of salt

Directions:

Preheat oven to 350 and grease an 8x8 baking pan.
In a medium bowl whisk together the flour, baking powder, baking soda, cinnamon, salt and nutmeg. Set aside.
In a small bowl, whisk together yogurt, milk, neutral oil, sugar, vinegar and almond extract.
Slowly pour the wet mixture into the dry gently fold to combine then pour into the baking pan.
Mix all topping ingredients together and sprinkle onto the cake in an even layer.
Bake for 25-30 minutes or until the top is brown and crispy and a toothpick comes out clean.
