Waffle Ice Cream Sammies
Who doesn’t love a good ice cream sandwich (or sammies, in my house)? If you raised your hand, you’re welcome to leave or stick around and let me try to convince you otherwise. These sammies are customizable in every way- from the size to the ice cream flavor and even the “toppings” you can truly make these your own. I use a blueberry waffle with walnuts and cinnamon ice cream as well as a buttermilk waffle with chocolate ice cream and rainbow sprinkles. See what I mean? The options are endless. Now let me ask again..
Ingredients:
6 frozen buttermilk waffles
6 frozen blueberry waffles
1 pint Cinnamon Ice Cream
1 pint Chocolate Ice Cream
1/2 cup chopped pecans
1/4 cup sprinkles of choice
Directions:
Toast all waffles and set aside to cool.
Lay out 3 buttermilk waffles.
Evenly divide the chocolate ice cream between all 3 and smooth into an even layer.
Add another buttermilk waffle on top and gently press to help distribute the ice cream.
Pour the sprinkles onto a plate and roll the edges of the waffles until coated.
Repeat with the blueberry waffles and cinnamon churro ice cream but this time, rolling them in the chopped pecans. Freeze for about an hour then cut into halves or quarters and enjoy immediately.
Keep frozen for up to 2 months.
