Crunchy Cluster Granola

This recipe is a bit of an oxymoron because though it is crunchy as the name states, it’s also very soft and easy to devour. It’s great as a snack and even better topped with fruit over milk or yogurt. Loved by many, fought over by all.

Ingredients:

10-12 dates, pitted
1/2 cup almonds
1/2 cup walnuts
2 cups oats
dash of cinnamon
1 tsp salt
1/3 cup oil
1/3 cup syrup
1/2 cup cranberries
1/4 cup pumpkin seeds

Directions:

Preheat oven to 300 degrees.
In a food processor, pulse the dates until broken into small pieces.
Add the almonds, walnuts and oats and pulse 5-8 times.
Add in the remaining ingredients and pulse until combined and all nuts are coated.
Transfer to a baking sheet and spread into a single layer, packing the mixture down tightly.
Bake for 20 minutes, flip pan and bake 20 minutes more.
Allow to cool then break into pieces and enjoy.
